Gluten/egg/dairy free 1st birthday cakes!

Despite the birthday boy taking a tumble down the garden stares (and thus receiving a bloody nose), he had a wonderful time popping bubbles, eating his special wheat/ dairy/ egg free monster cakes and being chased and squashed by his older cousins and sister.

What better way to celebrate!

Egg/ Wheat/ Gluten free birthday monster cakes

150g/5oz Gluten-free self raising flour (I use Doves)

150g/5oz Brown sugar

25g/1oz cocoa powder (I use Green and Blacks)

A pinch of salt

120ml/4fl.oz. Water

30ml/1 fl.oz. Vegetable oil

1 tbsp Vinegar

1 teasp Vanilla extract

1. Preheat the oven to 180C, 350F, Gas Mark 4.

2. Mix all the dry ingredients together, then make a hole in the middle and pour in all the wet ingredients. Mix well.

3. Divide into about 12 fairycake cases and bake for 20-25 minutes. Cool on a wire rack before icing.

4. I used ready dyed ready to roll icing to make the monster faces, stars and number ones!
